BEEF BONE BROTH

Ingredients:

  • 4 lbs beef bones with marrow
  • 4 carrots, chopped
  • 4 celery stalks, chopped
  • 2 medium onions, peel on, sliced in half lengthwise and quartered
  • 4 garlic cloves, peeled and smashed
  • 1 tsp kosher salt
  • 1 tsp whole peppercorns
  • 2 bay leaves
  • 3 sprigs fresh thyme
  • 5-6 sprigs parsley
  • ¼ cup apple cider vinegar
  • 18-20 cups cold water

 Preparation

  1. Place all ingredients in a 10-quart crock pot
  2. Bring to a boil over high heat
  3. Reduce and simmer for about 48 hours or until the marrow comes out of the inside of the bones
  4. Remove from heat and allow to cool slightly
  5. Discard solids and us a colander to strain remainder into a bowl
  6. Let stock cool to room temperature
  7. Cover and chill
  8. Use within a week or freeze up to 3 months
