PROTEIN BREAKFAST SANDWICH

Servings: 1

Ingredients

  • 2 Tbsp butter
  • 4 mini bell peppers, finely chopped
  • 4 pieces of turkey or regular bacon (nitrate-free), fully cooked
  • 1/4 cup spinach
  • 3 eggs
  • Salt and pepper to taste

Preparation

  1. Cook bacon until crispy
  2. Let bacon cool on a paper towel
  3. Spray waffle maker with coconut oil cooking spray and heat up the waffle maker
  4. Whisk together eggs, spinach, bell peppers, salt and pepper
  5. Pour just enough mixture into the waffle maker to cover the bottom as it will rise as it cooks
  6. Cook for approx 2 minutes 
  7. Repeat
  8. Place one waffle on the bottom, place bacon on top and then the second waffle on top
  9. Add any additional avocado, salsa etc that you want
