EGGPLANT BAKE

Servings: 5-6

Ingredients:

  • 1 eggplant
  • 1 Tbsp avocado oil
  • 3 Tbsp thyme
  • 2 Tbsp sesame seed
  • 1 Tbsp Italian seasoning
  • 1 tsp lemon zest
  • 2 Tbsp tahini
  • Salt and pepper to taste  
  • Your favorite seasonal fruit

Preparation:

  1. Preheat oven to 400 degrees
  2. Cut eggplant into ¾ inch thick slices
  3. Put a paper towel down on cookie sheet and place the eggplant slices on it
  4. Sprinkle salt on top and let eggplant sweat for 30 minutes
  5. After 30 minutes, pat dry 
  6. Lightly grease the baking sheet with avocado oil and place eggplant slices back on
  7. Lightly brush avocado oil on top
  8. Combine thyme, sesame seeds, Italian seasoning, salt, pepper and lemon zest
  9. Sprinkle on top of eggplant slices
  10. Bake eggplant for 20-30 minutes
  11. Smear tahini on top of one side of the eggplant slices
  12. Add your favorite seasonal fruit to the side of the eggplant slices 

Erica's Bonus Tip: When you cook eggplant, make sure you don't overcook it because it will become mushy
