EASY STREET TACOS

Ingredients:

  • 6 chicken breasts
  • 1 sweet yellow onion (chopped)
  • 1 jalapeno (diced, no seeds)
  • 1 tbsp. coconut oil
  • 1 tbsp. butter
  • Sea salt and pepper
  • Cayenne pepper
  • Corn tortillas
  • Salsa
  • Guacamole or avocado
  • Rice
  • Beans

Preparation:

  1. Grill or bake the chicken breasts {season to you liking with sea salt, pepper and cayenne}.
  2. Start the rice on the stove {follow directions on package of rice}.
  3. Combine onions, jalapeno, coconut oil, butter, sea salt and pepper into a large skillet on medium heat. Stirring occasionally.
  4. Warm your favorite beans on the stove.
  5. Once chicken is cooked, cut up into small chunks and add to the onion mixture in the large skillet.
  6. Let it simmer with the onions while you get everything else together.
  7. Warm the tortillas.
  8. Serve easy street tacos with a side of rice and beans and your favorite salsa and guacamole or avocado.
    • If serving little ones, keep aside some plain chicken to serve with rice and beans for them.

Refrigerate leftover chicken and onion mixture for two more meals over the next two days.
