DEVILED EGGS

Ingredients:

  • 6 eggs
  • 1/4 cup avocado mayo
  • 1 tsp rice vinegar
  • 1 tsp yellow mustard
  • 1 Tbsp chili powder
  • 1 tsp capers
  • 2 Tbsp dill pickle, diced 
  • 1 Tbsp Spanish paprika

Preparation:

  1. Boil 6 eggs on high for 7-10 minutes or until done
  2. Strain and let cool in a bowl of cold water
  3. Peel the eggs and dry off with a paper towel
  4. Cut the eggs lengthwise and carefully place the yolks in a bowl
  5. Add avocado mayo, vinegar, mustard, chili powder, dill pickle, capers and 1/2 Tbsp of paprika to bowl and mix well
  6. Generously spoon the yolk mixture into the eggs whites
  7. Sprinkle with remaining paprika 
  8. Refrigerate for 30 minutes
