CROCK POT CHICKEN DINNER

Ingredients:

  • 1 whole chicken
  • 2 sweet white onions
  • 1 bag of baby carrots or 6+ whole carrots (cut in chunks)
  • 1-2 sweet potato or yam (cut in chunks)
  • 1 yellow squash
  • Any other veggies you would like to add 
  • Sea salt, black pepper, tarragon, garlic salt to taste

Preparation:

  1. Place onion on bottom of crock-pot and place entire chicken on top (be sure to take out the innards).
  2. Season lightly, then add the carrots and sweet potatoes or yams and season again lightly.
  3. Cover and cook on low for 8 hours. Remove veggies and chicken. Pull the chicken off the bones.
  4. Serve the pulled chicken with veggies.

Save the bones and freeze to make chicken bone broth at a later time!
