CHICKEN + RICE SOUP

Kids love this soup!

Servings: 4-5

Ingredients:

  • 2 cups chicken, cooked and diced
    • I always use whatever protein I have leftover in the fridge (preferably chicken or pork), but you can also leave out the protein altogether 
  • 2 containers of chicken bone broth or make your own homemade (see Chicken Bone Broth recipe)
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 1 green pepper, diced
  • 1/4 cup green onion, finely chopped
  • 1 Tbsp chili powder
  • 2 Tbsp garlic
  • 2 cinnamon sticks
  • 1/2 onion, diced
  • 3/4 cup jasmine rice
  • 1 poblano pepper, diced
  • Salt and pepper to taste

Preparation:

  1. Over medium heat, cook the bone broth, chicken and cinnamon stick together for 20 minutes
  2. Add in the red pepper, green pepper, yellow pepper, onion, garlic, poblano pepper, green onion and chili powder
  3. Cover and let it simmer for around 25 minutes or until peppers begin to soften
  4. Add the jasmine rice
  5. Cover and let simmer for an additional 10 minutes
  6. Remove the cinnamon sticks
  7. Ladle out into soup bowls
