CHIA SEED PUDDING

Ingredients:

  • 1/4 cup Chia Seed
  • 1 cup blueberries
  • 1 cup regular coconut milk
  • 1 cup plain yogurt
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1/8 tsp salt

Optional Items:

  • Substitute blueberries for your favorite fruit in season

Preparation:

  1. Whisk milk, yogurt, honey, vanilla and salt together
  2. Whisk in chia seed
  3. Put in fridge and let it sit overnight
  4. The next morning, fold in blueberries
  5. Place in self serving dishes and place back in the fridge
