Celery + Leek Soup

Ingredients:

  • 2 tbsp garlic, diced
  • 1/2 sweet onion
  • 1 tsp of thyme
  • 1 leek, chopped
    • Make sure to cut the end off first 
  • 1 celery stalk, chopped 
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 apple, diced

 Preparation:

  1. Sauté butter, garlic, onion, salt and pepper on medium heat
  2. Add thyme, leek and celery to the pan and steam on high for 10 minutes or until soft
  3. Blend together with olive oil until smooth
    1. When blending pause periodically to let the steam out so it doesn’t build up
  4. Sauté apples separately until golden brown 
  5. Pour into bowl and top with apples

Erica's Bonus Tip: Adding olive oil makes the soup creamier
