BLUEBERRY POPSICLES

Servings: 12

Ingredients:

  • 1 pint of organic blueberries
  • 3 cups coconut milk
  • 5 Tbsp honey
  • 1 cup yogurt
  • Popsicle molds

Optional Items:

  • To make dairy-free, replace the yogurt with a can of coconut cream
  • Recommend Siggi's plain yogurt or one low in sugar

Preparation:

  1. Place the blueberries and 4 Tbsp of honey is a skillet and simmer together on low heat for 4-5 minutes
  2. Remove from heat, place in an open container and put in freezer for 5-7 min
  3. Whisk together the coconut milk, yogurt and remaining 1 Tbsp of honey until fully blended
  4. Remove the blueberries from the freezer and scoop into popsicle molds, filling them 3/4 the way full
  5. Pour the coconut milk mixture into each mold, filling to the top
  6. Place in freezer for approx 2-4 hours
