BACON PANCAKES

Servings: 2

Ingredients:

  • 2 Tbsp butter
  • 5 pieces of turkey or regular bacon (nitrate-free)
  • 2 eggs
  • 1/3 cup of old fashion rolled oats
  • 1 Tbsp + 1 tsp coconut flour
  • 2 Tbsp honey
  • Pinch of salt
  • 1 tsp olive oil

Preparation

  1. Cook bacon until crispy
  2. Mix together eggs, honey and salt
  3. Add coconut flour and mix
  4. Add oats and whisk together 
  5. Once bacon is done, place on paper towel and let cool
  6. Heat skillet to medium heat and add a small amount of avocado oil
  7. Fold bacon in half and dip into pancake mixture then place on skillet 
  8. Drizzle pancake mix on top of the bacon 
  9. Cook until done, flipping every 2 minutes
